Special Earth Day Dinner


I wanted to do special something with the kids for Earth Day to help them understand it better. So I decided to have a dinner only consuming things that were straight from our garden. We spent the day picking lettuce, spinach, asparagus, and strawberries to get them ready for our dinner. We fibbed a little bit and added pecans from Grandma and Grandpa's garden for protein but we did shell them ourselves (I only wish we had pecan trees). Barry Bretton just loved this because he got to use a hammer because I couldn't find the nut cracker. Then we topped it with a berry vinaigrette. We talked about how the Earth is a gift from our Father in Heaven and we need to treat it with respect by taking care of the things around us. It was great cause we got to admire and eat lots of our Heavenly Fathers creations. I asked the kids where nuts came from cause we did not pick them ourselves and Barry Bretton said "Cows". Too funny!

That looks really good! What a clever idea. I'll have to steal that for a Family Home Evening! (I want a garden though!) :)

Wow, that is a beautiful dish! It looks yummy too. That is such a cool way to teach your kids about Heavenly Fathers creations! And Yes, In-n-out has been so packed for the last two days!

I would love to have some of that salad right now! I can't believe you are growing all of that in your garden! We can't even start planting our garden yet! Well, we did peas, but the rule up here is to wait until after Mother's Day for most everything else. Will your kids eat it just like that? I would have to separate everything for my kids to eat it. :) Great way to celebrate Earth Day. I celebrated by watching American Idol - probably not the best way.

That looks so good. I have been craving fresh food like that for days. You are so lucky to have a big garden like that.
